ALL-IN-ONE DAY CAKE!
Last Sunday, my friend’s brother asked if I could make him an anniversary cake for his girlfriend Last Tuesday. I was not able to make the decor that Sunday night because I was so sleepy and tired already when I got home from the meet-up for the cake plan. (or maybe I just wanted to crash with all the food I ate from the late lunch - Bon Chon Chicken and Gelato from Cafe Ti Amo, by the way, BEST GELATO SO FAAAR and talk about crispy sweetness on a chicken!). I usually make cake decor day/s ahead from the day I bake and assemble the whole cake. Woke up 7 in the morning (Monday) and started at 9? Hahaha! made the flowers, chocolate box, the piggy and the girl first. Made more fondant, baked the chocolate cake and made the special icing filling, chocolate hazelnut. I was supposed to finish around 3pm but the cake was still too hot for it to be iced and decorated. So, I decided to.. SLEEP. I then finished decorating around 7pm. And then, the client called at around 9.30 and asked if he could just pick up the cake (instead of have it delivered it to their house on Tuesday morning) so he can surprise his girl at 12mn. I couldn’t say no, just the thought of it is sooo sweet! Unfortunately I was not able to print the “happy anniversary sign” because the fugly printer doesn’t recognize the new ink cartridge we bought. FRUSTRATING. At least the client said it was okay if I did not put it anymore. Then I felt bad because that was supposed to be the highlight of the cake, so I did the best I could do and wrote it in the nicest rushed handwriting. He then picked it up and was happy about the cake!

This client ordered her cake just the day before delivery. It’s like she rushed it in an emergency room and got a doctor cake out of it. I could not say no anymore because she’s a good friend of my dad’s. Thank God, I still had ingredients left for a carrot cake. Anyway, I have made this cake before and I’m happy with the results of the REMAKE.
ANGRY BIRDS CAKE FOR KYLE!
This kid, Kyle, is sooo adorable, he said to his mom that the cake will COMPLETE his birthday! AWWWW. Gladly, he was very happy about the cake (I just hope that he didn’t notice that the pigs’ eyes were not in the right place and oh yeah NO EYEBROWS too!!!). He’s only 6, so i hope not! :) The inside is a chocolate cake with chocolate fudge icing. And everything else was sculpted with love and imagination. Hahaha!
Note to self: NEVER IMAGINE on specific characters ever again. Next time, PRINT IT FOR REFERENCE!!!!! GAAAAHHH! It was almost perfect.
Basketball Cake and Basketball Cupcakes
At first I thought this cake was supposed to be for a little kid but then it wasn’t. Hahaha! Added texture to the basketball cupcakes to somehow make it look like a real ball. Anyway, The cake’s flavor is carrot and cashew with cream cheese icing. Same with the cupcakes.
Happy 70th Birthday to my Lola!
Made this for my Lola last July 27. She loves planting in her garden so much that I’ve decided to make her a flower pot cake together with mini pot cupcakes. The inside is a banana cake with cream cheese icing. It was pretty cold and rainy that day, the fondant did not dry up so well. I wasn’t able to get the “clay pot” look that I wanted and the flowers got soft because of the cold. Apparently, water is the enemy of the fondant, it melts/softens because of the moisture. Had to edit out some of the highlights that showed in some photos to make it not look so shiny. The “soil” was made out of crushed oreo. Hope I could remake this cake and rewind her birthday. :(((

This cake will be given to a stage 4 breast cancer patient who might be having her last birthday today. The four mini pig cakes on the sides are her closest friends. I still hope to make her more birthday cakes for the next coming years.
